Typical Tuscan Cooking

 

This property is located in a nice countryside at the outskirts of Montecatini Terme, one of Europe's prominent health centers. Inside, there is a professional kitchen equipped with up-to-date appliances and a traditional brick-pizza oven.  The chef-owner, Giuseppe Mazzocchi, is also a member of the Italian Chef's Federation, and he schedules cooking classes, pizza, pasta  and pastry making throughout the year, especially week-ends.  Of course, for the clients, he basically sets up tasty, tangy and delectable variations; olive oil and meats from the valley's farmers.  

The former 16th century wheat-mill, then converted in an oil-mill, has been recently restored to lodge 8 people in two Tuscan-styled furnished apartments.  Spend some relaxing days  in the farm house or enjoy outdoor activities such as fishing in a nearby lake and trekking through the surrounding hills; or visit nearby towns of Lucca, Montecatini or Pisa.

living room The classes are held between 9:00am and 2:00pm.  For the rest of the afternoon the guests have the opportunity to visit an Olive Oil Mill with wine tasting, or stop by the farmer's market.  For dinner, the students can dine at one of the nice restaurants that are located a short walking distance away.

THREE NIGHT COOKING COURSE

FIRST DAY ANTIPASTI

On the first day you will learn "Antipasti" dishes such as;  wild boar sausages, grilled veggies, pasta with a range of different sauces.


SECOND DAY MAIN DISHES

On the second day, the class focuses on main courses either pork, lamb or beef with side dishes based on farm vegetables and legumes..


THIRD DAY  A Chocoholic's GETAWAY

On the last day, we focus on chocolate preparations: truffles, Sacher or chocolate mousse  

    

TWO NIGHT COOKING COURSE

 

FIRST DAY ANTIPASTI

On the first day you will learn "Antipasti" dishes such as;  cured sausages, ham, mixed bruschettas, extra virgin olive oil Focaccia, Pork loin with fennel and garlic, Tuscan side dishes


SECOND DAY

On the second day, the class focuses on "First dishes".  These include home made pastas, soups and second dishes based on poultry and beef from the farmlands. 

 

As an option two fish courses based on fresh catch from the Tirreno Sea. (i.e. Cacciucco Soup and baked seabass or rockfish with tomatoes and herbs)

PASTA DISHES - 2-DAY COURSE 
This 2-day course focuses on the basics of  hand-made pasta.  This 2-day course focuses on the basics of  hand-made pasta.  typica3

You will learn how to create Ravioli with Ricotta, goat-cheese and 

eggplants.  You will also be taught Risotto with Ossobuco, Ribolita soup and  
potato gnocchi. The last part of the program will focus on how to make  the 
Tuscan meat sauce and the simple tomato sauce as well as the pesto sauce.
