The classes are held between 9:00am and 2:00pm. For the rest of the afternoon the guests have the opportunity to visit an Olive Oil Mill with wine tasting, or stop by the farmer's market. For dinner, the students can dine at one of the nice restaurants that are located a short walking distance away. |

FIRST DAY ANTIPASTI On the first day you will learn "Antipasti" dishes such as; wild boar sausages, grilled veggies, pasta with a range of different sauces.
On the second day, the class focuses on main courses either pork, lamb or beef with side dishes based on farm vegetables and legumes..
On the last day, we focus on chocolate preparations: truffles, Sacher or chocolate mousse |

FIRST DAY ANTIPASTI On the first day you will learn "Antipasti" dishes such as; cured sausages, ham, mixed bruschettas, extra virgin olive oil Focaccia, Pork loin with fennel and garlic, Tuscan side dishes
On the second day, the class focuses on "First dishes". These include home made pastas, soups and second dishes based on poultry and beef from the farmlands.
As an option two fish courses based on fresh catch from the Tirreno Sea. (i.e. Cacciucco Soup and baked seabass or rockfish with tomatoes and herbs)

PASTA DISHES - 2-DAY COURSE
This
2-day course focuses on the basics of hand-made pasta. This
2-day course focuses on the basics of hand-made pasta.
You will learn how to create Ravioli with Ricotta, goat-cheese and
eggplants.
You will also be taught Risotto with Ossobuco, Ribolita soup
and
potato gnocchi. The last part of the program will focus on how to
make the
Tuscan meat sauce and the simple tomato sauce as well as the pesto sauce.
